This is the traditional Chinese style all purpose knife. It is suitable for all Chinese and Western cooking. Performed like Santoku knife for slicing, dicing, and mincing. The blade size is slightly bigger than Santoku for easy cutting for larger food.
This knife is designed for all purpose use. If you want to have a specific cut you need use other type of knives. We recommend you buy with RT-652 for thin cutting. You need two sets of knives to alternately use every other day for professional cooks.
This knife shape is like a banana so we named it Banana Knife. It was designed as a modification of the Western Skinning knife. This knife designed for easy skinning and cutting meat or fruit. The curve eliminates smashing the fruit.

RT-650 & 652 are working better together in pair. Professional normally lets the knife ‘rest’ for a day to restore it’s patina and remove any metallic odor or taste that stay on the blade.

WARNING: Soft blade knives are only designed for cutting or slicing vegetables or meat.
